I have been cooking for a small army for most of that. This is my use 98% of the time flour mix when baking. I am a frugal gluten free baker. I can’t see buying all those flour mixes that are pre-made and come with a big price or flours like Almond flour that are $14.00 for a small package. I have found that unless I am going to make something very special or delicate my all purpose flour mix works just fine.
I generally buy rice flour in 50 pound bags from Honeyville. Then I add the other flour and starch to it all at once. One afternoon of work makes for several months of all purpose gluten free flour.
