I was born and raised in northern Ohio and summer was the time of plenty. Plenty of zucchini. Plenty of tomatoes. And tons of corn.
The old adage with sweet corn is you set the water to boil on the stove. When it boils go out and pick you corn from the field. Run them directly in and put them in the water. If you trip stop and go pick more.
While I can’t get that kind of field to table turn around. I can make sure we eat as much fresh produce as possible. My kids would live on corn all summer long.
I have a tiny problem though. I seem to have missed the gene that tells a farmer’s wife when corn on the cob is done. I boil the dickens out it.
Not anymore. I have an Instant Pot recipe ready to take care of the timing for me.
- 10-12 cleaned corn on the cob
- 2 cups water

Clean the corn on the cob.

Put the steamer basket in the Instant Pot. Pour water into the pot.

Fill with corn.

Use manual function to place on high pressure for 2 minutes. Allow natural release for 10 minutes.
