Late summer in West Virginia means lots of tomatoes. I can as much as possible. Last year that was about 200 pounds. This year was not nearly as good as last year. I was tired and even in the power wheelchair just not able to do much.
I like canning. It’s a fun and practical skill to know. Beyond all that I can so I KNOW what I food and ingredients we are eating. Gluten free, low sodium, soy free, allergen free.
Pizza Sauce is one of the best loved things we can all year round and most practical. It can be used for a wide variety of recipes.
PIZZA SAUCE
about 5 pints
Material:
fresh tomatoes about 6 pounds per 5 oz package

First step to any canning is a clean, super clean, very clean working area, utensils, jars, and rings.
Second step is you need to skin the tomatoes. This is much simpler than I thought it would be. Have a boiling pot of water. Beside that a large bowl of ice cold water.
Boil the tomato for about 1-3 minutes. Then move skinned tomatoes straight to the ice cold water. Pull it out and you can then just skin it with your fingers by rubbing the skin off.
Third step
Place jars in warm place like a dishwasher on heat or an oven on a very low temp (225 degrees) to keep hot.

6 pounds of tomatoes,
5 Tablespoons Sugar
1 pouch of sauce mix (Food starch, salt, maltodextrin, onion, spice, paprika, beet powder, citric acid, garlic)
Take the tomatoes and chop them up coarsely. I got rid of as many seeds by hand as possible. Then puree tomatoes in blender or use a food mill.
Bring tomatoes to boil, pour in all ingredients. After reaching a boil reduce to simmer for 25 minutes. Stir occasionally.
Clean off rim and add lids.
Pour hot sauce into hot jars (important so you don’t have breakage!).
Leave half inch head room.

Water bath jars for 40 minutes. Water bathing means you put the jars in water 2-3 inches over their tops at a rolling boil. Keep the boil going the whole time.

This is the easy one…sort of. DON’T TOUCH! Let the jars sit and cool completely. Then enjoy through out the year!
This recipe creates about 5 pints. The sauce is a bit spicier than the average grocery store sauce. We like that extra zing. As mom and food cop I love that I know exactly what goes into this sauce.
