Going gluten free has encouraged me to make our meals from as close to scratch as possible. The more processed the food is the more chances of gluten contamination and additives. Time to think fresh!
Starting fresh means using produce as fresh from the farm (or your garden) as you can get it. That can mean more work. Personally I can’t handle lots more work. I am a special needs homemaker and need to adjust my cooking to reduce the work as much as possible.
Here is a neat trick to peel your garlic super quick and easy!
1) Smack a head of garlic firmly on the root end on the cutting board.
2) Take a clove of garlic and place a large bladed knife flat on it.
3) With the palm of your hand firmly smack the flat blade of the knife down on the clove.
4) The papery outer layer will now easily peel off the clove.
Now you can use the garlic however you wish. I find that with it flattened like this it is easier to mince or use in a marinade.
Now to one of my BEST, YUMMIEST recipes that I have found recently.
Beef Brisket by Ree Drummond
Ingredients
2 cans beef consommé -I used homemade beef broth.
1 1/2 cups soy sauce
1/2 cup fresh lemon juice
2 tablespoons liquid smoke -Double check that it’s gluten free! Colgin Liquid Smoke, 4.0 Ounce
5 cloves garlic, chopped
10 pounds beef brisket
Prepared barbecue sauce, for serving, optional ~I canned my own. Seems like a crazy huge thing but it is WORTH it! We will go over that in the future.~

I chose to make the marinade then put the brisket and marinade into a large Ziploc bag. It froze fine. I thawed it and cooked it for 7 hours. The taste and texture of the meat was fine.
Another brisket I marinaded on Prep Day. Then I cooked on OAMCing day. When it was done I shredded it with a couple of forks. Then portioned out the meat to 3 meals and froze them. Again the meat thawed and was used just fine.
Brisket seemed to be a unbeatable meat when it came to OAMCing! We use this brisket for all things delicious and beefy. Tacos, burritos, sandwiches, salads, and more. Anything that calls for a clean wonderful beef flavor!
